Ingredients
- 1 onion, sliced
- 1 tbsp butter, plus additional
- ½ tbsp oil
- 1/2 red cabbage, roughly chopped
- 1 apple, chopped
- 75ml balsamic vinegar
- ½ tbsp brown sugar
- Salt & pepper
- Fresh parsley, to serve
Method
- Fry the sliced onion in the butter and oil until brown
- Add the chopped cabbage and apple, then fry for 2 minutes whilst stirring
- Add the vinegar and sugar, plus 3 tablespoons of water, and stir. Then, cover with a lid and leave on a low heat to cook for 30 minutes, stirring occasionally
- Take lid off and turn the heat up for around 5 minutes to cook off excess moisture, season to taste and add a knob of butter. Finally, sprinkle with parsley and serve
If you have more time add half a glass of red wine with the vinegar and allow to slowly simmer down.
