Choose either Root veg or Soft Veggies

500g Root vegetables -any mix of carrots, parsnips, beetroot, Celeriac, potatoes, squash

500g Soft Vegetables- any mix of peppers, aubergines, onions, courgettes, tomatoes, mushrooms

½ tsp. smoked or unsmoked paprika

½ tsp. garlic granules

2 tsp. dried rosemary or thyme

2 tbsp. olive oil or any type of oil

Salt and pepper, to taste


  1. Preheat the oven to 200°
  2. Peel the root vegetables
  3. Cut Veggies into rough chip shapes of a similar size place onto a large baking tray
  4. Drizzle with oil and rub it all over then sprinkle with dry ingredients and mix to coat evenly.
  5. Bake in the oven (for soft veg 20 mins or root veg 40mins) Stirring once during cooking to get and even bake
  6. Serve alongside a Pukka pie for a tasty, hearty and wholesome meal.

Swap the garlic and herbs for fresh if you have them.

Like it spicy? Add some chilli flakes and a sprinkle of cumin for an extra tasty side dish.
