Ingredients


  • 1 onion, sliced

  • 1 tbsp butter, plus additional

  • ½ tbsp oil

  • 1/2 red cabbage, roughly chopped

  • 1 apple, chopped

  • 75ml balsamic vinegar

  • ½ tbsp brown sugar

  • Salt & pepper

  • Fresh parsley, to serve

Method

  1. Fry the sliced onion in the butter and oil until brown
  2. Add the chopped cabbage and apple, then fry for 2 minutes whilst stirring
  3. Add the vinegar and sugar, plus 3 tablespoons of water, and stir. Then, cover with a lid and leave on a low heat to cook for 30 minutes, stirring occasionally
  4. Take lid off and turn the heat up for around 5 minutes to cook off excess moisture, season to taste and add a knob of butter. Finally, sprinkle with parsley and serve

If you have more time add half a glass of red wine with the vinegar and allow to slowly simmer down.
