  • 500g sweet potatoes

  • 1 ½ tsp salt

  • 1 garlic clove, peeled

  • ¼ bunch spring onions, finely sliced

  • 1 tbsp of fresh parsley, chopped

  • 1 tbsp of vegan butter

  • Freshly ground black pepper

  • A drizzle of olive oil


  1. Peel and dice the potatoes into small chunks and cover with an inch of water
  2. Add the salt and peeled garlic, bring to a simmer and cook for approx. 12 mins until the potatoes are soft
  3. Drain potatoes well and return them to the pot and mash
  4. Add the spring onions, parsley, vegan butter and season with salt and pepper to taste
  5. Transfer to a serving bowl, finish with a twist of pepper and a drizzle of olive oil
