Ingredients
- 500g sweet potatoes
- 1 ½ tsp salt
- 1 garlic clove, peeled
- ¼ bunch spring onions, finely sliced
- 1 tbsp of fresh parsley, chopped
- 1 tbsp of vegan butter
- Freshly ground black pepper
- A drizzle of olive oil
Method
- Peel and dice the potatoes into small chunks and cover with an inch of water
- Add the salt and peeled garlic, bring to a simmer and cook for approx. 12 mins until the potatoes are soft
- Drain potatoes well and return them to the pot and mash
- Add the spring onions, parsley, vegan butter and season with salt and pepper to taste
- Transfer to a serving bowl, finish with a twist of pepper and a drizzle of olive oil
